We and our ancestors have lived around crawfish all our lives and now we are dedicated to bringing live crawfish and other fantastic Cajun food products to people around the U.S. After all, crawfish has been called a delicacy here since the early 20th century. Crawfish was once thought of as a poor man's food because they were plentiful and easy to catch. They soon became more and more popular and people started having "crawfish boils." A crawfish boil is very popular in Southern Louisiana - people call friends and family together to boil and serve the crawfish, usually in the spring and early summer months when crawfish are more plentiful and cheaper. When having a crawfish boil, you can usually plan on ordering about 1-2 lbs. per person (3-4 lbs. for a heavier crawfish eater) as long as you have other items to serve such as sausages, potatoes, corn, etc. Also, boiled crawfish goes excellent with cold beer. A crawfish boil is a tasty excuse to call over a few family and friends. And we at Kyle LeBlanc Crawfish Farms would like to spread this Cajun tradition throughout the nation. Leftover crawfish are great to make crawfish dishes like etouffee, bisque, stews, fried, etc. (see our recipes). We also include crawfish recipes in your order. Whatever crawfish you have not eaten in 2-3 days after your party, you can peel these remaining crawfish and store them in your freezer until ready to cook. Our live crawfish come in 3 sizes: select (large), medium and bait size (crawfish make excellent bait!). You can see the count size on our products and prices page. We sell mainly Procambarus Clarkii (Red Swamp Crawfish) and Procambarus Actus Actus (White River Crawfish - Spillway Crawfish - Belle River Crawfish). We sell live and boiled crawfish year round, however, they are more plentiful and cheaper in spring and early summer. Crawfish and our other Cajun products can turn any routine holiday into a Mardi Gras! We have other Louisiana seafood and food products such as shrimp, crab, turtle and alligator as well as prepared foods that contain these products and crawfish such as sausages, boudin, pies, patties, etc. We also have turkduckens, which is a boneless duck wrapped by a boneless chicken wrapped by a boneless turkey stuffed with either crawfish or shrimp dressing or rice dressing.
